Buttery Bone-in Texas Ribeye

Instructions
- Select bone-in ribeye with high quality marbling and thickness.
- Pat dry and thoroughly salt the steak.[5m]
- Dry brine steak on a raised wire rack at least overnight.[24h]
- Melt butter and olive oil on medium-high heat.[3m]
- Once pan has come to temperature, gently place steak and cook each side for 1 minute.[2m]
- Continually flip steak, cooking for at most 30 seconds per side at a time. Tilt pan down and constantly spoon excess oil and fat onto the top surface.[3m]
- Halfway through the cook, add rosemary and garlic towards the bottom of the pan. Continue to flip steak and scoop excess fat and aromatics.[3m]
- Once steak has reached internal temperature of 110f, take off heat and place on wire rack to rest.[10m]
- While steak is resting, deglaze pan with whiskey. Thoroughly scrape fond and mix into liquid. Add chopped shallots and dijon mustard. Cook until sauce has thickened.[5m]
- Plate steak and garnish with the aromatics and sauce. Enjoy!
